This guacamole recipe is not low fat, not low cal. But it is high flavor, big taste, and super delicious!
- 4 avocados
- 4 small tomatoes (I love to use the tomatoes on the vine), diced
- 1/2 small red onion, diced
- 1 to 2 limes
- 1/4 cilantro, chopped
- 1/2 cup of mayo
- salt & pepper to taste (I of course love Jane's)
Scoop out the avocado from the peel and mash with a fork. Add all the other ingredients, mix well. Add salt and pepper to taste. The key to a good guacamole is the mayonnaise and lime. If it doesn't taste right, add more lime juice.
